Oat root is also called sweet, white, or oyster. Roots up to 30 cm long and about 4 cm in diameter are a storehouse of nutrients: vitamins, microelements, contain inulin – a substance necessary for diabetics. They have an oyster flavor and are considered a gourmet delicacy served in high-end restaurants. Harvested in late autumn, letting them freeze a little – this makes them sweeter. Some of the plants can be left in the garden until spring – they will be perfectly preserved under a cover made of non-woven material. In addition to root vegetables, young greens are also eaten – they are put in vegetable salads. In winter, you can use the root for distillation, like parsley and celery.
